Miguel was born March 4, 1974, in Buenos Aires. As the son of a Basque father and Ukrainian mother, Miguel grew up influenced by the cuisine of his mother and grandmothers.
He studied hotel management at the Ott College in Buenos Aires.
After graduating, he set off to work in various restaurant kitchens in Buenos Aires. He then traveled to Spain and France, where he spent a year staging in restaurants in La Coruña, Valencia and, finally, Paris.
Back in Buenos Aires he joined the Marriott Corporation where he started as a Restaurant Chef and then was promoted to Executive Chef. With Marriott he directed the kitchens of the Marriott Plaza in Buenos Aires, the JW Marriott in Quito, and the JW Marriott in Miami’s Brickell area.
Finally, he returned to Quito with his family to open Alma in March 2008.
